Step 1

Instructions
Step 1
Cream the sugar and butter in a large bowl until it turns fluffy. Then beat the egg with the butter and create a smooth mixture.
Step 2
Scrape down the bowl sides clean to bring the mixture in the middle and add the lemon juice, zest and thyme in it. You can also add a pinch of salt in this stage.
Step 3
Next up, sift the flour separately and add to the wet mixture. Then carefully cut and fold to blend well. Once you start getting a crumbly dough, bring it to your countertop and knead with your palm gently. Then wrap the dough with a cling film and refrigerate it at least for 1 hour before rolling.
